depending on what version of Parallels you have (2.5 or 3.0) you either have no Hardware 3D support (2.5) or limited to DirectX 8.1 (3.0).
Either way AOE III needs a bit more.
Though if you want to play it on you MB you have to consider using BootCamp, as it uses the MacBook hardware natively and not through virtualization like Parallels.

If you want to run MS Windows games on a Mac you need to purchase a license of MS Windows and install it. OS X and MS Windows are completely different operating systems.
You can use Boot Camp to boot your iMac as a Windows machine, or run it in virtualizaiton software such as Parallels or VMWare Fusion to run Windows at the same time as OS X. As with any MS Windows machine you will need to use antivirus and antimalware applications to protect the MS WIndows partion.
